Our chef and mixology team have crafted a menu and cocktails using the Siete Leguas tequilas as both inspiration and ingredients. The dishes and cocktails are original and only being produced for this event. Siete Leguas is a high quality small batch Tequila distillery and lends itself perfectly to this process.

 

The story of Siete Leguas (meaning “Seven Leagues”) originates from the famous horse of Mexican revolutionary Pancho Villa, known for its incredible endurance and speed. In honor of the horse’s legacy and the resilience it represented, Don Ignacio González Vargas founded the Siete Leguas tequila distillery in 1952 in Atotonilco, Jalisco. The brand embodies this spirit through its commitment to traditional, artisanal production methods, utilizing two distilleries—Fabrica el Centenario and Fabrica La Vencedora—to create its distinctive tequila.

 

The process begins with planting Agave tequiliana Weber (blue agave) in the red soil of Atotonilco el Alto, Jalisco. After approximately seven years, the agave finally reaches the precise point in its maturity to yield the best flavor.

At Siete Leguas we harvest the agave hearts (or “piñas”) and also save a small part of the green leaf stock – an important ingredient in our process for producing the characteristic body of our tequila. This highly skilled labor, arduous and intense, protects what nature took so long to bring to fruition.
